Kara's Indigenous Squash Mash
A Squash Mash Recipe for Thanksgiving.
Hi friends, I'm Kara. I'm a proud member of the Oklahoma Kiowa tribe and a cooking enthusiast. November celebrates Thanksgiving and it's also Native American Heritage Month. I created this recipe and I hope you will enjoy my Native American take on the classic mashed potatoes side dish. This easy mash (sans the potatoes) features two celebrated staples of Indigenous cooking - squash and sage. I'm going to give you options on seasoning but you can get creative and make this dish with the flavors and extra ingredients you like best. I hope you'll add it to your Thanksgiving meal in honor of ancient Native Americans. As you pass food around your table on Turkey Day, be sure and say, "Aho". It's the Kiowa word for "Thank you".
- Two whole butternut squash
- 2 tbsp of organic sage leaves
- 1 to 2 tbsp olive oil (or butter is optional)
- 2 tbsp white wine vinegar (for tang)
- 1 tsp chipotle powder (little heat)
- Salt and pepper to taste
Rinse and bake your butternut squash whole for about 1 hour 1/2 at 350 degrees. Remove from the oven and let it cool. Then, remove stem and skin. Mash the squash and add seasonings as desired. Salt and pepper to taste. Garnish with fresh herbs and serve warm.
